Well, you probably know that Batangas is famous for their cacao balls or chocolate tablea, right? And you also know about their iconic expression – ‘ala eh!’? If you are like me, I thought that that was the simple explanation or history behind the term, hehe, but it is not. The term Tsokolate eh dates back from the Spanish period and it pertains to the thick and rich hot chocolate drink of those days. The suffix ‘eh’, short for espresso, was added to differentiate it from a thinner version of the drink, which came to be known as Tsokolate ah. ‘Ah’ was derived from aguada or watered-down.Tsokolate eh (Hot Chocolate Tablea Drink)So aside from my advocacy to promote Filipino and Filipinized food and my love for chocolate, this recipe was actually inspired by a frustration: My husband and I went to Baguio about a month ago and I was very excited to sample some of the more famous hot chocolate drinks there. We tried the ones offered by TsokolateriaChoco-late de Batirol and Cafe Yagam. Unfortunately, none was able to satisfy my craving for a thick, rich and deep hot chocolate drink or justify their prices. So I made a mental note to just create my own concoction and enjoy to my heart’s delight. It was still summer then so the heat made it unimaginable for me to dream about any thing hot once we were out of Baguio (although I did try to make some on an uncommitted whim). Finally, it’s now cold and raining (I love it!). I firmly believe that a hot chocolate drink is meant to be thick, rich and deep. If you do too, you will not be disappointed with this recipe, which by the way is sooooo easy to make. Drinking this Tsokolate eh is drinking love!

Ingredients
  1. 1 1/2 cup Water
  2. 1 cup Fresh Milk
  3. 3/4 cup Alkalized Cocoa Powder (I used Bensdorp)
  4. 1/4 cup White Sugar
  5. 12 pcs Chocolate Tablea (I used a sweetened version from Batangas)
Instructions
  1. Starting with the liquids, put everything in a blender and mix until well-combined
  2. Transfer to a pan and place over low heat, stirring constantly until it boils and thickens
Notes
  1. Instead of Fresh Milk, you can use Evaporated Milk, Soya Milk or a blend of 1/3 Cup Powdered Milk and 1 Cup Water
  2. You can also use other sweeteners like Brown Sugar, Muscovado Sugar, Coco Sugar or Splenda
  3. Adjust the sweetness according to your taste
