No Bake Oatmeal Caramel Bars

no-bake-oatmeal-caramel-bar_1The idea for this No Bake Oatmeal Caramel Bar recipe came when I was thinking of a way to use the batches of caramel I had from trying to perfect my Homemade Caramel Sauce (a la McDonald’s). One day, I got inspired by two of my other recipes – Homemade Energy Bars and Homemade Cereal Crispies. I toasted some rolled oats and poured in caramel for flavor and as a binder; and added melted butter and marshmallows to soften the texture. As you can observe and as I also did, this is not a particularly healthy recipe so I thought why not go all the way and pour in melted chocolate to serve as a topping! Now, with caramel and chocolate you can never really go wrong so this was definitely a hit with my friends and family, especially the kids. no-bake-oatmeal-caramel-bar_4This is a quick and easy recipe to make if you already have caramel on hand so I suggest that you make a big batch of my Homemade Caramel Sauce ahead of time. It keeps for like forever so don’t worry plus there are other recipes that you can use it with like my No Bake Banoffee Pie. Oh! It just hit me, my Homemade Dulce de Leche would be an awesome substitute for the caramel sauce if you want it easier. I can’t say enough how easy my Homemade Dulce de Leche is. No Bake Oatmeal Caramel Bars
You can never go wrong with caramel and chocolate so this will be a sure hit with all your family and friends, especially the kids!

Ingredients
  1. 4 cups (360 g) Rolled Oats or the instant variety
  2. 1 1/4 cup Homemade Caramel Sauce
  3. 1/4 cup (57 g) Unsalted Butter
  4. 2 cups (100 g) Mini Marshmallows
  5. 1 cup (170 g) Compound Semi-Sweet Chocolate Chips or use Real Semi-Sweet Chocolate Chips
  6. 2 tbsps (30 ml) Cooking Coconut Oil or any other Vegetable oil
  7. Salt (optional)
Instructions
  1. Toast 4 cups (360 g) Rolled Oats for about 4 minutes or until lightly browned or a little bit more browned if you like the toasted flavor
  2. Mix in 1 1/4 cup Homemade Caramel Sauce until well-blended and set aside
  3. Melt 1/4 cup (57 g) Unsalted Butter and 2 cups (100 g) Mini Marshmallows in the microwave or in a make-shift broiler and stir until well-blended
  4. Add the Rolled Oats and Caramel mixture to this and fold until uniform in appearance
  5. Pour this on an 8x8 square pan or any pan you prefer or have to serve as the mold and set aside
  6. Melt 1 cup (170 g) Compound Semi-Sweet Chocolate Chips with 2 tbsps (30 ml) Cooking Coconut Oil or any other Vegetable oil
  7. Pour this on top of the oatmeal mixture in the pan and either flatten or create ripples for design
  8. Optional: Sprinkle with Salt
  9. Cover with foil and refrigerate until firm enough to cut (about 2 to 4 hours)
