I am not sure what category this recipe falls in. It can be a lot of things – a no bake recipe, a flourless recipe or a healthy recipe to say the least. It can cater to different people with different needs so in that way, it’s kind of a versatile recipe. As for me, it’s part of my health and fitness regimen now so I eventually decided on the post title: Homemade Energy Bar. I have been eating a serving of this, which is about 300 calories, for breakfast for about two weeks now. It keeps me full until lunch time. And for those of you who are probably wondering, yes, it is yummy enough to eat everyday ^_^. My mother even served this as snack to some relatives who visited by surprise about two days ago and they liked it. For a little bit of history, this recipe started with a recipe-less mish mash of stuff I have in my refrigerator. My husband loves Speculoos Cookie Butter but it is quite expensive so I tried to recreate it at home. Unfortunately, I took the name quite literally, grounded some Biscoff cookies and added some butter. Apparently, it failed, haha! I have yet to go back to that project but I’ll surely be doing so and share it with you. Anyways, one day I remembered still having this ‘mess’ sitting in the refrigerator (for weeks or probably months?=p) and decided to make good use of it. I thawed it and added in oatmeal, sliced almonds, the remaining Duhat (Java Plum) jam I cooked up and some marshmallows for binding (just like in my Homemade Cereal Crispies). The resulting deliciousness is pictured below but I unfortunately do not have the exact recipe for it. However, this is the kind of recipe which is very forgiving in terms of ingredients, measures and proportions. You can tweak and adjust according to what’s available or what you like. Moreover, I have a similar recipe, the one I’m featuring in this particular post to serve as your guide.On a more personal note and in the tradition of Keeping It Real, I would just like to share my weight struggle and my pursuit of health and fitness at this point since this Homemade Energy Bar recipe is significantly a part of that:
I have gained back the weight I had lost eight years ago plus more (35 lbs!!!) in the past four yearsm and I am very much frustrated with myself for allowing that to happen. I feel tired from struggling with my weight for most of my life. How can I not be like those who were born slim and mindlessly eat their way through life without gaining weight? How is it that I always need to be on a diet and consistently exercise just to be fit and healthy? It’s just so unfair! I know a lot of you are with me on this and we can rant and whine all we want (like I have been doing for the past three years). Unfortunately, that won’t magically change our bodies and make our metabolisms faster. On the contrary, I steadily gained more weight even as I was dieting and exercising (inconsistently) =\. I have hit my heaviest recently, which is heavier than my starting point eight years ago…I just had to make a decision. I have to accept my body and physiology for what it is right now (but not use it as a justification), adjust to the demands of my circumstances, make changes, celebrate small victories and just continue to live life to my fullest (which I have to note, does not equate to lack of self-control or self-discipline but about having a balanced life).
I am very passionate about food as this blog loudly implies but I don’t want food to be the master of me. I want to make every calorie count, enjoy and explore as much as this delicious world has to offer while making necessary adjustments, sacrifices and extra effort (more physical activity) so I can stay healthy and fit as I age.

- 2 cups (180 g) Rolled Oats
- 2 cups (250 g) Ground Almonds or Almond Meal
- 150 g Marshmallows
- 1 cup (250 g) Creamy Peanut Butter
- 1/4 cup Grape Jelly (for added flavor)
- 1/2 cup (60 g) Dried Cranberries
- Toast 2 cups (180 g) Rolled Oats in a pan over a stove for about 2 mins, stirring constantly to prevent uneven browning or burning
- Add in 2 cups (250 g) Ground Almonds or Almond Meal and toast for another 2 mins or until everything is lightly browned (or a little bit more browned if you like the toasted flavor)
- Melt 150 g Marshmallows in the microwave for about 30-45 secs
- Add in 1 cup (125 g) Creamy Peanut Butter, 1/4 cup Grape Jelly and 1/2 cup (60 g) Dried Cranberries and mix until well-combined
- Add in the toasted Oats and Almonds and mix until well-combined
- Transfer to a square pan or any other pan of choice
- Cool at room temperature or place in the refrigerator to firm up faster
- You can use an oven toaster to toast the rolled oats and ground almonds or almond meal
- You can melt the marshmallows using a makeshift double broiler or the real thing if you have it. Don't melt in a pan over direct heat because it burns easily
- Using marshmallows as a binder is optional but recommended. Without it, the bar will crumble easily and be a little tougher in terms of texture. On the bright side, you will lessen the calories per serving
- You can use whatever jam or jelly you have or like in exchange of the grape jelly or leave it out completely
